Project Details

Description

The purpose of this project is to collect striploin primals from the remaining U and V cohort animals and have the following objective measurements performed (IMF%, shear force, camera images) and conduct consumer sensory sample preparation.

This project will cover the costs associated with collecting carcase traits (IMF%, shear force and camera images), purchase of striploin primals and sensory sample storage from the remaining 1,244 steers from the southern multibreed herd.

Striploins will be prepped ready for sensory testing up to the picking and posting stage (allocation to sensory sessions) and stored frozen. It is envisioned that all collected cuts will have untrained consumer sensory testing completed through other MDC projects.
